Roasted Fruit and Oatmeal

Breakfast bowls are my go to morning meals. A pitaya bowl or warm bowl of oatmeal gives me the sweetness and nourishment I need to get my day moving in the right direction. Oatmeal bowls by far have to be my favorite breakfast meal.



WHAT YOU’LL NEED

1/2 cup brown sugar

1/2 teaspoon of cinnamon or ground cardamom

6 cups of fresh fruit, peaches, strawberries, raspberries (your choice)

3 tablespoonsful of butter, melted

granola ( topping)


DIRECTIONS

  1. Preheat oven to 450F.

  2. In a small bowl, combine brown sugar and cinnamon or cardamom.

  3. Line a sheet pan with parchment paper. Spread fruit evenly in pan.

  4. Drizzle the melted butter and sprinkle with the sugar & cinnamon mixture.

  5. Bake uncovered, 10 to 15 minutes or until fruit is soft and starting to brown.

  6. Let cool just a tad.

  7. Serve over oatmeal with granola.
